Documented food safety management systems

A food safety management system asks you to think logically about what might go wrong with the food
that you sell and what you must do to ensure it is safe for your customers. It is based on food
safety practices that you will already be familiar with.
Why have a documented food safety management system?
- It is legal requirement for all food businesses.
- If your business is taken to court you may be able to demonstrate that you had exercised diligence through arrangements in place to prevent an offence being committed.
- It helps ensure food is safe for customers to eat.
Safer food, better business
This is a food safety management system which has been developed to help small businesses with less
than 10 employees to comply with this requirement of the legislation. There is a Safer food, better business pack designed for caterers and one for retailers.
The pack has also been adapted for specific cuisines. These are for caterers that serve either
Indian, Pakistani, Bangladeshi and Sri Lankan cuisines or Chinese cuisines. The pack for Chinese
cuisine is also available in Cantonese. A copy of the pack can be ordered or downloaded from the
Foods Standards Agency website.
